Mock Lemon Juice

Freshly squeezed lemon juice is the best, but sometimes you don't have lemons, or even bottled juice. But if you have citric acid, lemon extract, and filtered water, you can make a good approximation of the real thing. It doesn't require refrigeration, but it won't damage it, either. It's a little cloudy on its own, but makes crystal clear cocktails and reasonably clear lemonade.

Instructions
Step 1
Stir the citric acid into the water until completely dissolved. Use a silicone coated whisk or spoon, if possible.
Step 2
Stir in the lemon extract. It will cloud up immediately because the lemon oils dissolve in alcohol, but not in water. A light film may form on the container, but it washes off easily
Step 3
Pour into a stoppered glass bottle. Shake well before use.
