Dry Ingredients
Step 1
Mix the the dry ingredients in a bowl
Wet Mixture
Step 2
In a separate bowl, melt the butter and add the brown Sugar & molasses. You can also use soft brown sugar as an alternative, as it is brown sugar with the molasses kept in

To the wet mixture, mix in the vanilla. Gradually whisk in the water. Add the grated ginger to your taste.
Combining
Step 4
Going back to the dry ingredient bowl, create a dip in the middle
Step 5
Slowly add the wet mixture into the dry ingredient bowl, a little bit at a time, mixing gently as you go along. The desired consistency should be dough-like.
Shaping

Once you have achieved the desired consistency, gently knead and roll the dough into a ball. Keep this in the bowl. Once in a bowl, sprinkle a bit of flour on the bottom of the bowl and on top of the dough. Cover and leave to rest In the fridge for 30mins-1hr.
Step 7
After the resting time is up, place the dough on a board/counter top. Dust the work surface and rolling pin very lightly with a bit of flour to prevent sticking.
Step 8
Roll the dough gently out with a rolling pin, into the desired thickness. Keep in mind once cooked, the cake will rise a bit more.
Step 9
Cut into desired cake sizes. Use any shape you want or a bowl. Recombine excess and repeat until all dough is used
Baking
Step 10
Place the cakes on a baking tray lined with baking paper. Bake for 15-30mins at 180ยฐC, checking periodically
Finishing touches + how to enjoy
Step 11
After cooked, leave to cool for a bit. Feel free to enjoy as is, or brush a tiny bit of melted butter on too. Enjoy with cheese and avocado [aka pear] x
