Beef Taco Pasta Bake

A family-friendly taco-flavoured pasta bake with beef mince, beans, corn and tomatoes, finished with sour cream or Greek yoghurt and a cheesy golden topping.

Instructions

Step 1
Cook pasta until just underdone. Drain and set aside.
Step 2
In a large pan, cook onion and garlic for 2–3 minutes.
Step 3
Add beef mince and cook until browned.
Step 4
Stir through taco seasoning and tomato paste.
Step 5
Add crushed tomatoes, beans, corn and any grated veg. Simmer for 10 minutes.
Step 6
Stir through cooked pasta and sour cream/Greek yoghurt.
Step 7
Tip into a baking dish, top with grated cheese and bake at 180°C for 15–20 minutes, or until golden and bubbling.
