Step 1
1. Preheat oven to 425F

2. Season the potatoes. In a large bowl, toss the potatoes with: Olive oil
Ranch seasoning
Garlic powder
Black pepper Spread them in a single layer on a large sheet pan. Give them some space so they roast instead of steam.

3. Roast
Bake for 35–40 minutes, stirring once halfway through, until the potatoes are golden brown and tender when pierced with a fork.
Step 4
Add the Cheese
Sprinkle the cheddar evenly over the potatoes. Return the pan to the oven for 5 minutes, just until the cheese is melted.
Step 5
Finish
Top with: Green onions
Parsley
Bacon (if using) Serve immediately.
