creamy lemon Parmesan chicken.
Ingredients
Chicken thighs
2 tbsp olive oil
3 cloves garlic, minced
Juice of 1-2 lemons (about 3 tbsp)
Zest of 1 lemon (optional, but great)
1 cup chicken broth
½ cup 2% milk
2-3 tbsp heavy cream (optional, but makes the sauce richer)
¼-⅓ cup grated Parmesan
1-2 tsp fresh thyme (or ½ tsp dried)
Salt and pepper
Instructions
Season the chicken generously with salt and pepper.
Heat olive oil over medium-high heat and sear the chicken 5-7 minutes per side until browned and cooked through (165°F). Remove to a plate.
Lower the heat and sauté the garlic for about 30 seconds.
Add the chicken broth and lemon juice, scraping up the browned bits from the pan.
Stir in the 2% milk and a splash of heavy cream. Simmer for 2-3 minutes. (Keep the heat fairly low once the dairy goes in so it doesn't separate.)
Stir in the Parmesan until melted. Add the thyme.
Return the chicken to the pan and spoon the sauce over it for another 2-3 minutes.
Serve with
Warm cooked quinoa.
Add the cooked broccoli to the pan during the last 2-3 minutes just to heat it through, or serve it on the side.
Optional additions
A pinch of red pepper flakes for a little heat.
Italian seasoning if you have it.
A handful of spinach stirred into the sauce at the end.
