Peach jalapeno coleslaw
Sweet Heat Peach Jalapeño Crunch Slaw Recipe with Fresh Summer Flavor
Ingredients
4 cups shredded green cabbage
1 cup shredded purple cabbage
2 ripe peaches, diced
1 fresh jalapeño, finely diced
1/4 cup shredded carrots
1/3 cup mayonnaise
2 tablespoons sour cream
1 tablespoon honey
2 tablespoons fresh lime juice
2 tablespoons chopped fresh cilantro
Steps
1. Combine the green cabbage, purple cabbage, diced peaches, jalapeño, shredded carrots, and cilantro in a large mixing bowl.
2. In a separate bowl, whisk together the mayonnaise, sour cream, honey, and fresh lime juice until smooth and creamy.
3. Pour the dressing over the slaw mixture and gently toss until everything is evenly coated.
4. Cover and refrigerate for at least 30 minutes to allow the flavors to blend while the vegetables remain crisp.
5. Toss lightly before serving. The peaches stay juicy, the jalapeño adds a fresh pop of heat, and the honey lime dressing creates a sweet, tangy finish that coats every bite.
6. Garnish with a few extra peach slices, chopped cilantro, and thin jalapeño rings for a colorful presentation.
