Instructions
Pandesal Dough
Step 1
Mix warm milk, lightly whisked egg, condensed milk, sugar, and instant yeast until the sugar dissolves.
Step 2
Add milk powder and all-purpose flour
Step 3
In the mixer, use the dough hook at speed #2 and mix until well combined. The dough should not be sticking to the bowl
Step 4
Slowly add butter and salt. Once all the butter and salt is fully incorporated, knead on speed 2 for about 5 more minutes Keep kneading until the dough passes the windowpane test. If the dough is still breaking apart, let the dough rest for 15-30 minutes before kneading again. The dough should be smooth and elastic
Step 5
Remove the dough and shape into a ball
Step 6
Oil the bottom of the bowl lightly, then place the dough and add a little bit of oil over the dough
Step 7
Cover the bowl in cling wrap + towel, let rise in a warm place for 30-60 minutes, or until (more than) double its size
Step 8
Punch the dough to release some air, and divide into 16 pieces. Shape each into a ball.
Step 9
If adding filling: Place each dough ball on a surface, cover, and let rest for 10-15 minutes. Flatten each dough ball, then fill with about 10 grams of cheese
Step 10
Cover each piece with breadcrumbs and place them about 1cm apart in a baking pan lined with parchment paper
Step 11
Cover the pan with cling wrap + towel and let rise in a warm place for 30 minutes (or more)
Step 12
Bake at 350 for 25 minutes or until lightly golden brown
Step 13
Let cool with a lid (with an air gap for steam) and store in an airtight container
