Make the crust. Blitz Oreos in a food processor and drizzle in melted butter. Press into a baking pan and freeze until firm.

Make the filling. Melt chocolate and butter together. Separately beat cream cheese, powdered sugar, vanilla extract, and kosher salt together. Fold in melted chocolate and half of the whipped cream. Make the Whipped Cream: Beat 2 cups cold heavy cream and 2 tablespoons of the powdered sugar together in a stand mixer with the whisk attachment on medium speed until firm peaks form, 6 to 8 minutes. Transfer to another bowl.

Assemble bars & serve. Spread chocolate filling over the Oreo crust, followed by the remaining whipped cream. Refrigerate until set, then cut into bars.
