Step 1
Prep the Tin: Line your small air fryer-safe loaf tin with parchment paper so the flapjacks are easy to lift out later.
Step 2
Chop the Pistachios: Use your manual pull-string chopper to pulse the pistachio kernels into a coarse, chunky chop.
Step 3
Melt the Base: In a saucepan over low heat, gently melt the butter, caster sugar, and golden syrup together until the butter is completely melted and combined (it's totally fine if the caster sugar looks a bit grainy).
Step 4
Add Flavor: Remove the pan from the heat, then stir in the vanilla extract, rolled oats, chopped pistachios, and a pinch of salt until everything is coated in the sticky syrup.
Step 5
Pack Firmly: Transfer the mixture into your lined loaf tin (covering about two-thirds of the length to get a nice, chunky depth). Use the back of a spoon to press the mixture down very firmly so it binds together.

Set your air fryer to 160°C (320°F).

Bake for 15 to 20 minutes until the edges are golden and bubbling.
Step 9
Cool & Slice: Leave them to cool completely in the tin (overnight is ideal) so they firm up into a clean, chewy texture before slicing.
