Ingredients

500gfresh mushrooms
sliced, button or chestnut mushrooms
1onion
medium, finely chopped
3garlic cloves
minced
40gunsalted butter
2 tablespoonsolive oil
2 tablespoonsplain flour
2 tablespoonssweet hungarian paprika
1 teaspoondried thyme
1 tablespoonfresh dill
chopped
750mlvegetable stock
250mlwhole milk
150gsour cream
1 tablespoonsoy sauce
1 tablespoonlemon juice
salt
to taste
black pepper
freshly ground, to taste

Instructions
Step 1
Step 1: Prepare the vegetables
Clean the mushrooms with a damp cloth or paper towel and slice them evenly.
Using a sharp chef's knife, finely chop the onion and mince the garlic. Chop the fresh dill and set it aside.
Step 2
Step 2: Cook the onions and mushrooms
Heat the butter and olive oil in a large saucepan over medium heat.
Add the chopped onion and cook for 4–5 minutes until softened.
Add the sliced mushrooms and cook for 8–10 minutes, stirring occasionally, until they release their moisture and begin to brown.
Stir in the minced garlic and cook for another minute.

Step 3: Add the paprika and flour
Sprinkle the flour over the mushrooms and stir well.
Add the sweet Hungarian paprika and dried thyme, stirring for about 30 seconds.
Avoid cooking the paprika for too long, as it can become bitter.
Step 4
Step 4: Add the stock and simmer
Gradually pour in the vegetable stock, stirring continuously to prevent lumps.
Add the soy sauce and bring the soup to a gentle simmer.
Reduce the heat and cook for 10–12 minutes, allowing the mushrooms to become tender and the broth to thicken.

Step 5: Make the soup creamy
Lower the heat and stir in the milk.
In a separate bowl, mix the sour cream with a few tablespoons of warm soup until smooth.
Gradually stir this mixture back into the saucepan.
Do not let the soup boil after adding the sour cream, as high heat can cause it to curdle.

Step 6: Add the finishing touches
Stir in the lemon juice and chopped fresh dill.
Season with salt and freshly ground black pepper to taste.
Allow the soup to warm gently for another 2 minutes.

Ladle the Hungarian Mushroom Soup into warm bowls.
Garnish with a spoonful of sour cream and a sprinkle of fresh dill.
Serve immediately with crusty bread or toasted sourdough.
