Instructions
Step 1
In a large pot melt the butter and add the Leeks, Onion, Celery, and Carrots. Saute' until they are tender
Step 2
Stir in the flour and cook to make a blond roux.
Step 3
Stir in the stock/broth. Bring to a boil, stirring frequently. Add the bay leaves, Thyme, and Crushed Peppercorns. Reduce heat and simmer 30 minutes stirring occasionally.
Step 4
Strain the soup through a China Cap into a clean pot. Bring to a simmer
Step 5
When ready to serve stir in the dry mustard into the heavy cream and add the cream, wine, cheese, and Worcestershire sauce to the soup. Stir until smooth.
Step 6
Adjust seasoning to taste with salt and pepper.
Step 7
If the soup is too thick for your taste tin with additional stock/broth.
