Instructions

Step 1
FOR THE CRUST:
1. In a food processor, blend 120g rolled oats and 60g almonds/walnuts until finely ground. 2. Transfer to a bowl, add 2 tbsp peanut butter, 2 tbsp honey and 2 tbsp milk. Mix until sticky. 3. Line an 18cm springform pan with baking paper. Press the oat mixture firmly into the bottom to form an even crust. Place in fridge while you make the cream. FOR THE CREAM:
4. In a large bowl, whisk 250g Greek yogurt, 100g mascarpone light, 20g chia seeds, 1 tbsp honey and 1 tsp vanilla until smooth. 5. Let sit for 5 minutes - chia will start to thicken the cream. ASSEMBLY & CHILLING:
6. Pour the yogurt chia cream over the chilled crust and spread evenly. 7. Top with handful of raspberries/blueberries and 10g dark chocolate shavings. 8. Cover and chill in fridge for 2-3 hours until firm and set. 9. Slice and serve cold - keeps for 2 days in fridge!
