A spicy-sweet topping of crumbled gingersnaps turns peaches into a warm, homey des without the high fat content of traditional crisps and pies.
For much of the year, unsweetened peach slices, frozen at their peak, are preferal the hard, flavorless fresh peaches in our markets that have been shipped from another sphere. But when they are in season, nothing can compare to the scent and succulenc fresh, ripe peach.
1 pound frozen unsweetened sliced peaches or 3 cups peeled fresh peach slices

Step 1
Preheat the oven to 425°.
Evenly distribute the peach slices in the bottom of an unoiled nonreactive 9-inch pan or 8-inch square baking dish. Sprinkle the peaches with the brown sugar, cinnamc lemon juice. Top with the crumbled gingersnaps. Bake for about 20 minutes, until the peaches are bubbling and tender when pierced with a fork.
Serve warm or at room temperature, plain or with frozen yogurt.
