0.33 Cupketchup
¼ cuplight brown sugar
packed
0.33 Cupgluten free soy sauce
0.25 Cuppineapple juice
1 ½ tablespoonsrice vinegar
1 tablespoonminced garlic
jarred
1 tablespoonminced ginger
½ teaspoonsesame oil
4 x 6 ounceboneless skinless chicken breast
chopped into 1 1/4 inch cubes
1red onion
large, peeled and diced into 1 1/4 inch pieces
1green bell pepper
large, seeded and diced into one 1/4 inch pieces
3 cupsfresh pineapple
cubed
2 tablespoonsolive oil
½ teaspoonsalt
¼ teaspoonground black pepper
Instructions
Step 1
In a small bowl, whisk together ketchup, brown sugar, soy sauce, pineapple juice, vinegar, garlic, ginger and sesame oil.
Step 2
Place chicken in a gallon sized sealable plastic bag. Save 1/2 cup marinade in the refrigerator, then pour remaining marinade into bag with chicken. Seal bag and refrigerate one hour. Soak 10 wooden skewered sticks and water for one hour.
Step 3
Preheat a gas grill to 400 degrees in a medium bowl. Add red onions, bell peppers and pineapple and drizzle with olive oil and toss, seasoned with salt and pepper, thread marinated chicken, onions, bell peppers and pineapple onto skewers.
Step 4
Place skewers on a greased grill. Grill 5 minutes, then brush marinade along tops with reserved 1/4 cup marinade. Turn skewers over and brush remaining 1/4 Cup marinade on opposite side.
Step 5
Grill four to five more minutes, or until chicken registers 165 on a meat thermometer, serve warm.
