Ginger Molasses cookies

These are spiced with a secret ingredient… candied ginger! The little bits of sweetened ginger take these cookies to the next level. You can grab some candied ginger at Bulk Barn, but if you can’t find it, don’t fret, just double the amount of ginger powder!

Instructions

Step 1
1. Whisk together the flour, salt, baking soda, and spices. Set aside.

2. Using a stand mixer with a paddle attachment or a hand mixer, Cream together the butter and sugars till light and fluffy, about 2-3 minutes.

3. Add in the molasses, vanilla and egg and whisk till combined.
Step 4
4. Pour in the flour mixture and mix with a spoon or silicone spatula till almost combined.
Step 5
5. Fold in the candied ginger to finish combining the wet and dry ingredients.
Step 6
6. Chill the dough the fridge for 4-6 hours or overnight, no longer than 24 hours.
Step 7
7. Take the dough out of the fridge 15-20 minutes before you are ready to bake, preheat the oven to 350 degrees and line a cookie sheet with parchment paper.

8. Scoop out the cookies using a 1oz scoop and roll the cookie ball into the turbinado sugar.
Step 9
9. Place on the prepared a cookie sheet leaving about 2 inches in between the cookies.

10. Bake for 8-12 minutes, till the edges of the cookies have some wrinkling and the tops have some slight cracking

11. Let the cookies cool on the tray for 10 minutes before transferring to a cooling rack to finish cooling
