6 cupsspinach leaves
2 ouncesreduced fat cream cheese
0.13 Cupshredded parmesan cheese

for the sauteed
8 ozmushrooms
sliced
2 Tbspbutter
olive oil
in bottle
½ cupchicken broth
2cloves garlic

2.75 poundschicken breasts
sliced in half horizontally to make 8 thinner breast portions
4 ozshredded part-skim Mozzarella
½ tspgarlic powder
¼ tspseasoned salt

Instructions
Step 1
Preheat the oven to 350 degrees F.
Step 2
Sprinkle the garlic powder, seasoned salt, and pepper on both sides of the chicken.
Step 3
Bake for 16 minutes.
Step 4
Meanwhile, make the creamed spinach. Over medium-high heat, mist olive oil in a skillet. Add in the minced onions and saute 2-3 minutes.
Step 5
Add in the spinach and garlic. It will shrink ridiculously.
Step 6
When it's cooked through, stir in the cream cheese and parmesan cheese.
Step 7
Continue cooking and stirring until the cream cheese is melted. Remove from heat.
Step 8
For the mushrooms, melt butter and mist olive oil in a skillet. Put the mushrooms in and cook until browned all over. Don't season with salt until they are browned or they will never brown.
Step 9
Add in the garlic and season with salt and pepper.
Step 10
Flip the chicken pieces over.
Step 11
Divide the spinach and mushrooms over the top of each breast.
Step 12
Place cheese on top of chicken.
Step 13
Cook for another 12-14 minutes or until cheese is browned and chicken is done.
