Instructions
Step 1
Heat olive oil in a large pan of wok, add onion & cook until softened for 3-5 mins.
Step 2
Mix in ginger and garlic and cook for 1-2 mins. Add peppers and cook for 2-3 mins.
Step 3
Add peas and sweetcorn, season and heat through.
Step 4
Add in chicken & rice and cook for a few minutes until heated, make space at 1 side of the pan and pour in beaten egg. Scramble and then mix through rice mixture.
Step 5
Pour in sauce, add extra if needed.
Step 6
Serve with spring onion, sriracha and coriander.
