Instructions
Step 1
Heat grill pan over medium high. Coat with cooking spray
Step 2
Rub oil over pork. Add pork to the pan and loosely tent with foil. Grill for 10 minutes, turning occasionally
Step 3
While pork cooks, combine peach preserves, soy sauce, vinegar and garlic in a bowl. Microwave on high for 30 seconds until the preservatives have melted
Step 4
Grill pork for 6 minutes more or until 145°, turning and brushing frequently with peach glaze
Step 5
Remove pork from the pan and let stand for 3 minutes
Step 6
Cut crosswise into slices and sprinkle evenly with salt and pepper
