Step 1
Start by boiling the potatoes, peeled, for about 30 minutes, until fully cooked through.

In the meantime, add your breadcrumbs to a pan and toast lightly with the garlic powder and salt

In a bowl, add the cooked potatoes and mash them with a fork (or potato press). Add the Parmesan, mint, yolks and salt, and mix well

Preheat the oven to 200°C. Shape them into croquettes shapes and add them to a baking tray with a parchment paper sheet on it, before running them through the beaten eggs and the breadcrumbs. Cook in the oven for 10 minutes, then switch to broil for another 5 minutes
