Instructions

Step 1
Preheat an oven to 160’C Fan/180’C. Grease and line 3 x 6inch baking tins.
Step 2
Cream together the butter and sugar until pale and fluffy using an electric whisk or stand mixer.
Step 3
Beat the eggs into the mixture 1 at a time, allowing each to incorporate fully, followed by the vanilla extract.
Step 4
Gently fold in the self raising flour until a smooth batter is achieved.
Step 5
Bake in the preheated oven for 22-25 minutes. The cake should be even golden brown and risen. A skewer inserted into the centre should come out clean.
Step 6
Allow the sponge to cool completely before icing.

For the Vanilla Buttercream

Step 7
Using an electric whisk or stand mixer, cream the butter for 5 minutes until pale and fluffy.
Step 8
Add the sugar into the butter in 3 batches, beating well in between each addition.
Step 9
Mix in 2 tbsp milk at a time until the desired smoothness and thickness.
Step 10
Finish by mixing in any flavourings or colouring.
