Instructions
Step 1
Preheat oven to 375* F
Step 2
Chop up the cashews and set aside.
Step 3
Roll out puff pastry dough to accommodate the size of the Brie.
Step 4
Scoop 1 cup of ube jam in the center of the puff pasty, and spread to approximately the size of the Brie.
Step 5
Sprinkle the cashews on top of the ube.
Step 6
Place the Brie on top, and fold over the sides. Turn over so the seam side is down and place on a baking tray.
Step 7
Evenly brush the puff pastry with mayonnaise. Bake in oven for 30-35 minutes, or until golden brown.
Step 8
Let the Brie cool down for 30 minutes before cutting into it, so the cheese doesn’t leak out everywhere. Serve with a side of crackers.
