Step 1
Grate the cheese then add it to a food processor and process until it resembles crumbs . Then add chickpea flour salt pepper baking powder garlic powder thyme and chili flakes water and olive oil and process until its dough like

Step 2
Turn out the dough on to parchment paper then put another sheet of parchment paper on top and roll the dough out thin . Now use a pizza cutter to cut the dough on the outside and make it straight so you can cut even cracker size squares . The left over dough can be rolled out again or put in the fridge for later use . Now use a chopstick to make a hole in the center of each cracker then bake in the oven at 175 c /347 f for 15 minutes then remove the crackers and use the pizza cutter to separate them then spread them out on the baking sheet and bake at 200 c /392 for another 10-15 minutes or until golden and crunchy
