Step 1
Preheat an oven to 325 F. Line an 8” x 8” pan with foil and spray with cooking spray. In a small bowl, combine the almond flour, 2 T Swerve, cinnamon and 3 T melted butter until the mixture comes together and is moist. Press into the bottom of the pan in a thin, even layer. Bake for 20 minutes or until the crust is a nice golden brown. Remove from the oven and allow to cool slightly.

In a stand mixer, cream the cream cheese, ½ cup Stevia, vanilla, coconut flour and a pinch of salt together until creamy.

Add heavy whipping cream and lemon juice and mix on low speed until well combined. Add the eggs one at a time on low speed until combined well each time.

Pour batter into crust and bake for 35 minutes or until the center is barely set. Allow to cool at room temperature before placing in fridge. Allow to chill completely in fridge before cutting into 16 squares.
