Step 1
Preheat oven to 425 degrees F. Line a large sheet pan with parchment paper or aluminum foil. Use two pans for 6 or 8 servings.

Step 2
Peel and dice sweet potatoes. Trim ends from Brussels sprouts, then cut in half. Cut brats into thirds. Add to large mixing bowl.

Step 3
In a small bowl, whisk together olive oil, honey, Dijon mustard, thyme, salt and pepper. Pour over veggies and brats in the mixing bowl and toss to coat evenly.

Step 4
Spread mixture in a single layer on sheet pan and bake for 25-30 minutes, stirring halfway through, or until sweet potatoes are tender.
Step 5
When sweet potatoes are tender, broil on HIGH for 3-5 minutes, until golden brown.
