Place 1/4 cup butter & 1 cup water in a pot & bring to boil over low heat. Once the water boils *very important it boils* add a pinch of salt & 1 cup sifted all purpose flour. Quickly stir until the mixture forms a ball. Remove from heat and let it cool down. Once cool using an electric mixer on low speed add 4 eggs one at a time & mix well between each egg. Add the zest of 1 lemon & mix till the mixture is thick and smooth. Drop round tablespoons onto a greased baking tray & bake in a preheated oven at 350C till golden & firm to touch. When cool I use instant pudding to fill.
