Instructions
Step 1
preheat oven to 190oC

Step 2
heat the olive oil in an ovenproof skillet
Step 3
chop the potatoe into small cubes
Step 4
add the onion and potato to the skillet with the oregano, garlic powder, paprika and a pinch of salt and pepper
Step 5
cook on a medium heat for 2-3 minutes
Step 6
add the mushrooms, red pepper and broccoli and cook for a further 5 minutes until soft
Step 7
meanwhile cook the black pudding on a seperate pan for 3-4 minutes on each side
Step 8
whisk the eggs in a large mixing bowl
Step 9
pour the eggs into the skillet over the vegetables, then add the black pudding and grated cheese
Step 10
place the skillet in the preheated oven and cook for 5 minutes
Step 11
garnish with coriander and serve
