Instructions

Step 1
Combine the cinnamon and 1/2 cup sugar and set aside.
Step 2
Preheat oven to 350F. Spray a muffin tin with nonstick spray or line with liners.
Step 3
Whisk the flour, salt, and baking soda together in a large bowl and set aside.
Step 4
In a medium bowl, whisk the egg and sugar together until combined and lighter in color. Add the oil, sour cream, milk, and vanilla extract and whisk until combined.
Step 5
Pour the wet ingredients into the dry ingredients, whisking until just combined. Don't overmix.
Step 6
Spoon the batter into the liners, filing each halfway. Sprinkle about a teaspoon of the cinnamon sugar on each and top with additional batter. Give another light sprinkle of cinnamon sugar to the top.
Step 7
Using a knife, gently swirl the batter and cinnamon sugar mixture together.
Step 8
Bake for 17-19 minutes, or until a toothpick inserted into the center comes out clean.
Step 9
Cool for 5 minutes in the muffin tin, then remove and allow to cool on a wire rack.
