Instructions
Step 1
Heat oven to 425°F.
Step 2
Pierce the sweet potatoes all over with a fork.
Step 3
Bake in oven for 45 minutes to 1 hour, until you can easily pierce the flesh with a knife.

Once potatoes are cool enough to handle, slice open and scoop the flesh into bowl and mash with a fork.

Leave the oven on.
Step 6
Line a sheet pan with parchment paper.
Step 7
In a bowl, whisk together the mashed sweet potato and coconut milk.

Add the cassava flour, arrowroot flour, coconut flour, baking powder, salt, and palm shortening and whisk well until all of the ingredients are combined.

Using a spoon or a cookie scoop, drop the batter onto the prepared sheet pan.
Step 10
Use the palm of your hand to gently press down on each biscuit to flatten.
Step 11
Bake for 14 to 16 minutes.
Step 12
Remove the biscuits to a rack to cool for a few minutes before serving.
