Instructions
Step 1
Pour one breakfast cup of boiling water over 8oz chopped dates and add one teaspoon baking soda. Leave to stand
Step 2
Rub butter into flour, stir in dry ingredients. Add dates and liquid, beaten egg, v essence and stir to mix. Sprinkle with demerara
Step 3
Bake 45 mins in 7x 5 tin at regulo 4 (180)
Step 4
I bake it in a 2lb loaf tin for about an hour, maybe a little bit slower
Step 5
You can now get ginger packed like glace cherries – if you use them adjust the sugar. Lovely on its own or sliced and buttered
