Instructions
Step 1
Bring the heavy cream to a simmer over medium heat.
Step 2
In a separate bowl, mix together the warm heavy cream and chocolate until completely smooth.
Step 3
Line a dish with parchment paper.
Step 4
Transfer the chocolate into the dish.
Step 5
Smooth the surface of the chocolate.
Step 6
Refrigerate until the chocolate has become firm (~4-5 hours).
Step 7
Once firm, remove the chocolate from the parchment paper.
Step 8
Slice into cubes with a warm and sharp knife. Pro-tip: dip the knife into hot water between cuts for clean edges.
Step 9
Pulverize some freeze dried strawberries into a powder and dust the chocolate truffles with it.
