Instructions

Step 1
Using a cheese grater, shred both butter sticks onto a plate. Place the plate in the freezer while you continue with the recipe.
Step 2
Mix berries, sugar, coconut and water in a medium sized sauce pan. Heat over medium high heat until simmering while mixing often.
Step 3
In a small bowl, mix together cornstarch and 1 tbsp of water. Mix until fully combined.
Step 4
Heat your pot until a boil and add the cornstarch slurry. Mix continuously for 2 minutes or until your filling has thickened substantially. Set aside to cool.
Step 5
In a large bowl, whisk together the flour and sugar. Add in your frozen butter.
Step 6
With a pastry cutter or with your hands, mix until the butter fully breaks apart and the dough holds together when you squeeze it in your hands.
Step 7
Add in the egg and milk and mix until fully incorporated.
Step 8
Wrap dough in cling wrap and refrigerate for 30 minutes.
Step 9
After the 30 minutes, lightly flour a flat surface and roll out half of your dough until very thin, between 1/8th to 1/4th inch and is about the size of a standard cutting board.

Cut into 3x4 inch rectangles with a pizza cutter. Setting the pieces to the side as you go.
Step 11
Repeat this process with the second half of your dough.
Step 12
Mix together your egg wash.
Step 13
Coat the top of one piece of cut dough. Add a heaping tablespoon’s worth of filling to the center.
Step 14
Top with a second piece of cut dough and press down gently to spread the filling almost to the edge. Crimp the edges together with a fork.
Step 15
Place the filled tarts onto a lined baking sheet. Once all the tarts are done, puncture the center of each just through the top layer with your fork. This will help them to vent and not puff up too much.
Step 16
Chill the full baking sheet for 10 minutes before baking.

Preheat oven to 350 degrees.
Step 18
Bake the tarts for 15 minutes, rotate and bake for another 15 minutes or until golden brown.
Step 19
Let cool before adding the glaze. Mix all glaze ingredients together. Add more water if desired. It’s not a frosting so it will be runny and thin.
