Step 1
Preheat your oven to 400F. Start the caramel first by combining coconut cream, sugar, coconut oil, vanilla & spices in a small pot over medium heat. Allow mixture to come to a boil, then lower heat & simmer until slightly reduced/thickened - about 15 minutes.
Step 2
Meanwhile, layer sweet potato slices in a casserole pan starting circling the edges & filling in from there. Doesn’t need to be perfect!
Step 3
Carefully pour caramel sauce over sweet potatoes until evenly covered, leaving a little leftover to brush on top. Sprinkle over chopped walnuts & brush rest of sauce. Cover with aluminum foil & bake for 35-40 minutes until potatoes are fork tender.
Step 4
Remove from oven, add mini marshmallows & BROIL on high for 30 seconds until marshmallows are toasted, make sure they don’t burn! Let casserole cool slightly before serving, spoon over extra sauce from the bottom 😍
