Instructions

Step 1
Grease 2 tins, add parchment and flour sides

Sieve flour
Step 3
Add cardamon, pinch of salt, cinnamon, baking powder and bicarbonate of soda

Grate 2 oranges for zest

Place eggs, sugar and vanilla extract in mixer on high till creamy

Preheat oven to 140°C fan/170°C no fan

Add oil to creamy mixture

Add creamy mixture to dry ingredients

Add carrots in food processor till crushed

Toast walnuts, keep eye on them

Add walnuts and carrots to mixture

Pour mixture in tins and place in oven for 55 mins

For cream cheese:

Take butter and cream cheese out then wait for it to reach room temperature

Place butter in mixer wth K shape head for 5 mins on high speed and during it scrap sides so it connects together

Add cream cheese until it's cream colour and fluffy, keep scraping sides

Add vanilla extract, lime zest and 2 teaspoon lemon juice

Place in fridge if there's time

Wait for cake to cool

Spread cream on 1 layer then add other layer of cake on top

Spread cream again on top

Add walnuts and almonds
