Instructions
Step 1
preheat oven to 425F
Step 2
grease 8" shallow cake tin and line with a circle of greaseproof paper
Step 3
to make pastry sift flour into a bowl. rub butter into the flour using fingers. the mixture should look like fine breadcrumbs
Step 4
sprinkle 6 tsp cold water over the crumbs. mix to a stiff crumbly looking paste with a round bladed knife
Step 5
grow together with fingertips. add a little more water if required. turn out onto a lightly floured work surface. knead quickly until smooth and crackfree. wrap in cling film and place in fridge until ready.
Step 6
cover tin base evenly in sugar and sprinkle over some cinnamon. slice apples and arrange them evenly on sugar
Step 7
roll out pastry into a circle the size of the tin. place pastry on top of apples, press down slightly and tuck in edges.
Step 8
bake for approximately 30 minutes until the pastry is golden brown
Step 9
when cold loosen round edges and turn out onto plate apple side up and remove paper
Step 10
serve with cream, ice cream, or crème fraiche.
