Step 1
Preheat oven to 375 degrees. Coat muffin tin with nonstick spray and set aside.

Step 2
In a large bowl combine all ingredients and toss gently to mix. Spoon mixture evenly into 12 muffin tin cups. Press them down to make sure the mixture is very compact in the cups.
Step 3
Bake for 60 minutes. Remove from oven and let set for 5 minutes.
Step 4
Use a knife to loosen the sides. Gently lift out each potato cup and serve.
