Dulce de leche is literally Spanish for ‘sweet caramel’. Together with these moreish shortbread style biscuits it’s a match made in heaven!

Preheat the oven to 180C/Gas 4 and line two baking sheets with baking paper (or grease them with butter)

Put the sugar and butter into a bowl and beat with an electric whisk until light and fluffy. Then, beat in the egg and vanilla

Sift the flour, cornflour, and baking powder over the butter mixture. Then mix until a dough forms (note, it will be a looser dough than normal)

Using lightly floured hands, divide the dough into 16 equal pieces and roll into balls.

Plqce them on the prepared sheets, spacing them well apart. Then press down with the palm of your hand to flatten slightly.

Chill for 10 minutes in the fridge or until firm to touch.

Bake for 10-12 minutes, until the biscuits are pale and golden. Using a spatula, transfer them to a wire rack to cool.

When cold, sandwich the flat sides of the biscuits together with a tablespoon of dulce de leche, and dust with icing sugar to serve.

How to make Dulce De Leche

Pierce the top of the can in two places

Place it in a pan of gently simmering water, being careful that the water doesn’t come to the top of the can.
