Instructions
For Cobbler Mixture
Step 1
Heat oven to 400º
Step 2
Mix 1/2 cup sugar and the cornstarch in 2-quart saucepan. Stir in blueberries and lemon juice.
Step 3
Cook, stirring constantly until mixture thickens and boils. Boil and stir for 1 minute.
Step 4
Pour into ungreased 2-quart casserole; keep blueberry mixture hot in oven.
For Topping
Step 5
Cut shortening into flour, 1 tablespoon sugar, the baking powder and salt until mixture resembles fine crumbs. Stir in milk; drop by 6 spoonfuls onto hot blueberry mixture.
Step 6
Bake until topping is golden brown, 25-30 minutes. Serve warm with cinnamon whipped cream.
