Dad’s go-to birthday cake

I use a combination of this recipe and the german chocolate cake recipe from Sally's Baking Addiction. This cake recipe is great and tastes wonderful but the frosting and coconut/pecan mixture on SBA is excellent. Also added a dash of espresso powder to my chocolate frosting for a kick of flavor. A birthday favorite at my house!

I used this recipe to made the coconut frosting recipe from scratch to top a box cake and it was absolutely divine! I did make it ahead as it said I could and found it very heard to spread. So, if you’re going to do so make sure to give yourself plenty of time to let it come to room temp!

I didn't use this cake recipe since I have one from my great grandma but I did use the recipes for the frostings. Next time I would toast the pecans and might make the coconut pecan frosting with salted butter so it isn't so sweet.

Made this for my daughter's birthday. Both she and my husband said it was good but would prefer I skip the chocolate icing.

Substituted sour cream for milk to make is more moist. Came out great!

The coconut is not for me, but my mother-in-law loved this. The chocolate frosting is amazing though!

Made this for mom's birthday and everyone loved it! This cake is very moist, perfect with coffee. I will definitely be making this one again for a special occasion. Notes: I used Hersheys natural cocoa powder (do not use special dark and do not use trader joes). I also used olive oil instead of vegetable oil. 25 min one pan at a time is perfect for my oven.

Made for Val’s bday. Was good, not incredible though.
