Step 1
Preheat oven to 350 degrees F. Line a baking tray with parchment paper and toast the slivered almonds for about 8-10 minutes till they are golden.

In a bowl sift the flours, baking powder, and salt.

In the stand mixer with a paddle attachment, cream the butter with the sugar and maple syrup. Add the eggs, vanilla and almond extracts and mix till nice and creamy

Mix in the flour mixture and the toasted almonds and give it a quick mix till well incorporated. The mixture will be sticky and gooey.
Step 5
Dust a work surface with flour and transfer the dough. Mix and shaped the dough into 4 logs. Around 2” thick and 6” long.

Arrange the logs on two baking tray lined with parchment paper and bake for 30 - 35 minutes at 350 degree F till they firm up. The logs will flatten as they bake so make sure they are not touching each other on the baking tray. Rotate the trays half way through for even baking.

Transfer the logs on a cooling rack and let it cool for about 10 minutes. The logs will be soft and slightly golden brown.

Transfer the logs on to a cutting board one at a time and slice them diagonally into 1/2” thick slices.

Transfer these slices back to the baking tray and arrange them cut side down.

Bake for around 10 minutes till golden. Turn them over and bake the other side for another 8-10 minutes.

Transfer on a cooling rack and let them cool completely.
