Honey Thyme Candied Carrots

I decided to add a little spin on classic candied carrots by adding honey instead of sugar and adding thyme to add savory to the sweet. These were quick, easy, and delicious. The key to this recipe is to cook your carrots for 45-50 minutes at medium heat uncovered for the softest most decadent carrots= the best results! Instructions
Step 1
Rinse, peel, and slice your carrots (I sliced mine in an angular way).
Step 2
Add your carrots to a medium sauce pan full of boiling water + 1 tbsp of cinnamon. Cook for 45-50 minutes or until really soft.
Step 3
Once your carrots are done cooking drain your carrots. While your carrots are draining add your butter to a large skillet and melt. Once butter is melted add in honey and whisk. Once combined, add in corn starch and whisk again until thickened. *Feel free to alter the cornstarch measurements to your desired thinness or thickness*. At this point, you may want to add 1/4 -1/3 cup of room temperature water just so the mixture does not get too thick.
Step 4
Add in spices and seasonings and mix.
Step 5
Add in carrots and mix until all the carrots are fully coated. Allow to simmer on low for 3-5 minutes in order for the carrots to soak up all of the flavor and spices! Serve and enjoy!
