Global Harmony's No-crust Coconut Pie

Global Harmony is a world music community choir based in Melton Mowbray. Choir member Mary Ward adapted this recipe from one she was given in Georgia, USA, over 30 years ago. Liz Underhill, the choir leader, says the group like to sing a Jamaican calypso-style song with their pie as it goes so well with the ingredients.

Instructions
Step 1
Preheat the oven to 180°C/350°F/Gas Mark 4. Lightly grease a 25cm (10 inch) deep pie dish.
Step 2
Put the margarine and sugar in a bowl and beat together until pale and fluffy.
Step 3
Mix in the flour, then add the eggs one at a time, beating constantly.
Step 4
Fold in the coconut, lime juice and zest, then stir in the milk.
Step 5
Pour the mixture into the prepared pie dish and bake for 50-60 minutes, or until the top is firm and golden brown.
Step 6
Set aside to cool slightly before cutting into wedges and serving warm or cold.
