Instructions

Step 1
Get the ice cream out of the freezer so it can soften. Line a 2l pudding bowl with 2 sheets of wet scrunched up grease proof paper
Step 2
Slice four 2cm thick rounds off the pandoro, cut them onto half circles. Use 6 of them to line the sides of the bowl overlapping as you go.
Step 3
Drizzle the cinnamon syrup over the sponge, then use the back of a spoon to spread 3 tbsp of the salted caramel sauce onto the sides.
Step 4
Spoon one tub of ice cream into the bowl and push it down. Add the sweets, fudge pieces and remaining caramel sauce, then spoon the second tub of ice cream on top.
Step 5
Put the remaining two slices of pandoro on top and push down. Wrap over the paper and weight it down with a couple of plates. Freeze overnight.
Step 6
About 20 mins before you want to serve, take it out of the freezer unwrap and turn out into a serving dish. Leave to thaw just slightly.
Step 7
Snap the chocolate and melt it with the butter in a bowl over boiling water to create the sauce. Pour the chocolate over the pudding, add sparklers and serve.
