Instructions
Step 1
Day 1: In a small bowl, combine yeast, sugar and water.
Step 2
Allow to sit until foamy, about 10 minutes.
Step 3
In a large bowl, combine yeast mixture, buttermilk, salt and flours.
Step 4
Stir until combined, cover and refrigerate for 8-12 hours. Batter may double in

size, so make sure bowl is big enough to hold it.
Step 6
Day 2: Remove dough from refrigerator, it should be foamy and rather thick.
Step 7
Add all Day 2 ingredients, stir with strong spoon until batter is thoroughly mixed.
Step 8
This may take several minutes, and batter will still seem rather thick.
Step 9
Bake in waffle iron at medium high setting for 3 minutes. Makes 15 waffles.
