Instructions

Step 1
Pre heat oven to 350 degrees F
Step 2
In a large bowl, mix molasses, sugar, melted shortening, boiling water, soda, ginger, 1 tsp cinnamon, ground cloves, nutmeg and salt
Step 3
Add flour, only enough to make a soft dough
Step 4
roll out the dough to about 1/4 inch thick.
Step 5
using a large (about 2 inch diameter) cookie cutter cut out the cookies
Step 6
spaced about 2 inches apart place cookies on a parchment lined cookie sheet
Step 7
cook for 12 minutes to the desired level, this should produce a sift cookie. If you wish a crispy cookie coon for about 2 to 3 minutes more. The crispy cookies should be darker along the edges.
Step 8
prior to cooking mix the 3 Tbsp of sugar and the second tsp of cinnamon to make a cinnamon sugar. prior to cooking sprinkle the cookies with this cinnamon sugar mix
Step 9
place cookies on a rack to cool. They store well for up totwo weeks or can be frozen to be kept longer
