Instructions

Step 1
Get 185g unsalted butter and 185g dark chocolate into small pieces and drop into the bowl and microwave until melted
Step 2
While you wait for the chocolate to cool, position a shelf in the middle of your oven and turn the oven on to 180C/160C fan/gas 4.
Step 3
Tip 85g plain flour and 40g cocoa powder into a sieve held over a medium bowl.
Step 4
Chop 100g of chocolate (your choice) into chunks on a board.
Step 5
Break 3 large eggs into a large bowl and tip in 275g golden caster sugar keep going until it gets lighter in colour and leave a trail for a couple of second
Step 6
Pour the cooled chocolate mixture over the eggy mousse, then gently fold together keeping it nice and airy
Step 7
Hold the sieve over the bowl of eggy chocolate mixture and resift the cocoa and flour and gently fold again
Step 8
Finally, stir in the white and milk chocolate chunks until they’re dotted throughout.
Step 9
Pour the mixture into the prepared tin i use a 9x9 tin
Step 10
Bake for 25mins or longer if needed
