Cider Braised Country Ribs with Herbed Whipped Sweet Potatoes & Apple Onion Gravy

Instructions

Step 1
For the Ribs: Pat ribs dry and cut each piece in half. Peel onion and chop into half moon pieces about 1/2 in thick. Chop each apple into 8 pieces and discard core.
Step 2
Heat oil in a skillet over medium heat. Add ribs fat side down, cook rendering fat, until browned. Turn rib pieces and continue to brown on each side, about 5 minutes per side. Transfer ribs to a plate and repeat with remaining pieces, if necessary. Reserve rendered fat for later.
Step 3
Add apple juice and 2/3 of the apple cider vinegar to the bottom of your instant pot insert. Place ribs into the insert in layers, largest pieces on bottom. Tuck apple and onion pieces around ribs. Add rosemary and thyme, then sprinkle with salt.
Step 4
Pop instant pot lid on and set the vent to sealing. Use meat and stew setting and cook for 35 minutes.
Step 5
Turn off and let meat rest for 15 minutes before using quick release. Preheat oven to warm setting or 170F.
Step 6
After resting, remove and discard herb stems. Transfer ribs to a plate, cover and keep warm in oven.
Step 7
Using an immersion blender, puree liquid and leftover apple and onion mixture in the instant pot until you have a smooth sauce. You should have a little over 3 cups of liquid (per 4 servings). Taste and adjust seasoning. Add remaining apple cider vinegar, if needed.
Step 8
Use sauté function and bring sauce to a simmer. Cook until gravy darkens and reduces to your linking, about 5-15 minutes.
Step 9
For the potatoes: Meanwhile, peel and chop sweet potatoes.
Step 10
Add potatoes to a saucepan and cover with hot water. Bring to a boil, then reduce heat to a simmer and cook until they are just tender, about 15 minutes.
Step 11
Drain sweet potatoes and let them sit for a few minutes while they release steam-this helps reduce gumminess later.
Step 12
add sweet potatoes to the bowl of a food processor, along with 2 tablespoons (per 4 servings) of the reserved rendered fat. Roughly chop, then scrape down sides of the bowl. Add coconut milk, salt, rosemary, and thyme. Whip together until smooth and creamy.
Step 13
On a large platter, make a bed of whipped sweet potatoes, then top with country ribs and serve gravy on the side for family style. Alternatively, divide the mash between plates and portion country ribs as you'd like, then drizzle with gravy to taste.
