Step 1
1. Preheat the oven to 140°C Fan/Gas Mark 3.
Step 2
2. Heat the oil in a large frying pan over a high heat. Add the meat and cook until browned. Once browned, remove from the pan and place on a plate.

3. Add the onions and mushrooms to the pan and cook for a few minutes, again on a high heat, until browned.
Step 4
4. Transfer the browned meat, onions and mushrooms into a large saucepan with a tight-fitting lid. Add the flour and stir through.
Step 5
5. Add the ale, crumble in the stock cube and add the thyme and garlic. Stir well and season with salt and pepper. Bring the liquid up to a simmer.
Step 6
6. Move the casserole into the oven and leave to bubble away gently for 2 - 2 1/2 hours, keeping the lid on and stirring occasionally. Serve with mashed potato and vegetables.
