Ingredients

2 cupsflour

1 ½ cupsugar

2 Tbspbaking powder

1 tspsalt

1 tspground cumin

1 tspground ginger

1 tspground turmeric

¾ tspground cinnamon

¾ tspblack pepper
freshly ground

½ tspground white pepper

½ tspground coriander seed

½ tspground cayenne pepper

½ tspground allspice

½ tspground nutmeg

¼ tspground cloves

½ tspbaking soda

4eggs
room temp and slightly beaten

3 cupsshredded carrots

¾ cupvegetable oil

⅓ cupagave nectar

1 cupdried apricots
chopped
Instructions
Step 1
Preheat oven to 350°. Line bottom of 8 or 9 inch round baking pans with parchment paper. Grease and flour paper. In a mixing bowl combine flour, sugar, baking powder, spices, baking soda and 1/4 tsp salt.




Step 2
In another bowl combine eggs, carrots, oil and agave nectar. Stir egg mixture into flour mixture until combined. Stir un apricots. Pour into prepared pans.

Step 3
Bake 25-30 minutes or until toothpick inserted near centers cones out clean. Cool for 10 minutes. Remove cakes from pans, remove paper. Cool cakes on wire racks.

Step 4
Frost the top of each cake layer with Ginger-Orange Cream Cheese frosting, stack them as you go, frost the sides of cake.
