Ingredients

For the cake layer
1 boxlemon cake mix
reserve 1/3 cup dry mix set aside
1 cuplemon pudding
prepared
2eggs
¼ cupwater
¼ cupvegetable oil
1 sleevegraham crackers
small, broken into small pcs
For the buttercream layer
0.5 pkgcream cheese
softened
4 Tbspbutter
softened
1 tsplemon juice
1 Tbspheavy cream
½ tspvanilla
¾ cupspowdered sugar
sifted

Instructions
For the cake layer
Step 1
In large mixing bowl add 1 box lemon cake mix (reserve 1/3 cup) with the eggs, pudding, water and oil. Batter should be thick. Fold in the broken graham cracker pcs. Pour into buttered dish. Bake at 350 for 15 min.
For the cream layer
Step 2
In a small bowl cream together cream cheese, butter, lemon juice, cream and vanilla. Add powdered sugar 1/4 cup at a time, mixing thoroughly between each addition.
Step 3
After 15 minutes is up, poke holes in the top of the cake layer. **(At this time i chose to spread a thin layer of apricot jelly, this is totally optional. Raspberry or strawberry would be good too.)**
Step 4
Spread cream mixture over cake. Sprinkle with the reserved cake mix. Whip the reserved cream mixture and butter together, dollop all over the top. Bake at 350 for another 15 minutes, or until toothpick comes out clean.
Step 5
Serve with homemade whipped cream and top with crushed graham crackers. Enjoy!
