Green Spaghetti and Grilled Shrimp

Instructions

Step 1
Roast: 4 pablano peppers in a pan or with blowtorch. The more roasted the better. Steam peppers for 10 minutes, then rub the skin off and cut them open to remove the seeds.
Step 2
Blend: the 4 roasted pablano peppers, 1 jalapeño, 1 Serrano, half an onion, small bunch of cilantro, small bunch of spinach, 2 quartered tomatillos, 8 oz sour cream, 8 oz cream cheese, and a boullion cube together in a blender.

Step 3
Boil: Spaghetti noodles in a pot on medium heat until soft, salted liberally.
Step 4
Saute: 2 cloves of minced garlic with 2 tbsp butter in a pan until golden, and then add the green sauce and cook on low for 10 minutes while the spaghetti noodles cook.
Step 5
Saute: another 2 cloves of minced garlic with the other 2 tbsp butter in a separate pan.
Step 6
Grill: the 22 shrimp in the pan with sautéed garlic until just cooked. Season with cajun seasoning, salt, pepper, and a squeeze of lemon juice.
Step 7
Combine: cooked noodles and sauce, top with shrimp.
